Ingredients:
1 pound bacon
1 head iceburg lettuce
2 Roma tomatoes, diced
3 Tbsp. blue cheese crumbles
Buttermilk Ranch Dressing
Buttermilk Ranch Dressing
3/4 cup buttermilk (Chef's Note: If you don't have buttermilk, combine 2 Tbsp. vinegar with 3/4 cup milk in a small mixing bowl. Stir and let rest for 3 minutes. It will create homemade buttermilk.)
3 tablespoons plain Greek yogurt
2 tablespoons mayonnaise
1 teaspoon dill
1 Tbsp. minced garlic
1/2 teaspoon dijon mustard
2 tsp. salt
2 tsp. pepper
Place all ingredients in a blender or food processor. Blend until smooth.
Make Dinner:
Preheat oven to 365 degrees. Place a cooking rack on a large cookie sheet. Arrange sliced bacon atop cooking rack. Bake bacon for 20 minutes until crisp.
Using a very sharp knife, chop lettuce into bite size pieces. Place chopped lettuce onto a large serving platter. Crumble bacon atop lettuce. Top with diced tomatoes and blue cheese crumbles. Serve with homemade Buttermilk Ranch Dressing.
